Tex-Mex Pot Roast

Ingredients

5-6 lb beef chuck roast

2 tsps chipotle chile powder

1 can chile beans or red beans, drained

1 can whole kernel corn undrained

1 can Rotel Tomatoes

8 ounces slow roasted roma tomatoes

Directions

Put ingredients into slow cooker in order:
Chuck roast
Chipotle chile powder
beans
corn
tomatoes

Cook on low for 8-10 hours.

Serve over brown rice seasoned with lime juice & fresh cilantro.
